Day of Gluten-Free Favorites 

Welcome back to Gluten Free – With Me! 

For this blog post we decided to share some of our favorite recipes we have found. To make this information easier to digest, we separated them into categories. Breakfast, lunch or dinner, and dessert. Some of these recipes require more time and ingredients, while others are easier and faster to make. We wanted to included various options so that everyone would be able to find something useful in this blog post! 

Our priority with this blog was to share delicious flavors and wholesome ingredients. We want everyone to be able to enjoy these recipes. Whether you are gluten-sensitive, following a gluten-free lifestyle, or simply looking to try something new, we have great options for you. 

🍳 Breakfast Recipes

🩶Spinach, Egg White, and Ham Breakfast Sandwich 

Ingredients

-2 slices of gluten-free bread 

-Egg Whites 125 g

-38 g spinach 

– 75 g deli ham 

– 38 g mozzarella cheese

Instructions

-scramble eggs with spinach

-add to toasted bread

-warm up ham in skillet, then add cheese 

-add to eggs on toasted bread

🩶 Breakfast Casserole

Ingredients

-1 bag frozen Tater Tots

-Butter for baking dish 

-1 tbsp olive oil 

-1 medium onion, finely diced

– 1 cup milk 

– 1 pd breakfast sausage

– ½ cup half-and-half

-¼ tsp seasoned salt 

– ¼ tsp cayenne 

– 4 large eggs

-1 red bell pepper, finely diced 

-2 cups grated cheddar cheese

– 2 cups grated pepper jack cheese

– salt and pepper, to taste

Instructions 

-Line tater tots in a buttered baking dish 

– Add olive oil in a large skillet over medium heat, cook sausage and onion until cooked through. Let cool then sprinkle over tater tots

-In a large bowl, mix milk, seasonings, bell peppers, half of both cheeses and pour over tots mixture

-sprinkle rest of cheese over the top

-cover with foil and let refrigerate for a few hours, or over night 

-bake at 350 for about 25 minutes 

-remove foil and baked for an additional 20 minutes or so 

🍟 Lunch/Dinner Recipes

🩶 Buffalo Chicken Loaded Sweet Potato Fries 

Ingredients 

-106 g cooked chicken breasts

– 40 ml buffalo sauce

– 290 g sweet potatoes

– 20 ml olive oil 

– 40 g cheddar cheese

Instructions 

-cut sweet potato into fries and add to a pan with olive oil 

-cook in oven at 400 for roughly 30 minutes 

-bake chicken at 400 for about 25 minutes or until fully cooked 

– shred chicken and combine with buffalo sauce 

– add to sweet potato fries and top with cheddar cheese

-bake for an additional 10 minutes to melt cheese 

🩶Strawberry Chicken Salad 

Ingredients 

– 2 tbsp limeade concentrate 

– 1 chicken breast

– olive oil for cooking and for dressing 

– 1 tbsp white vinegar

– 1 tbsp sugar

– 1 tsp onion powder, ground mustard, salt, and poppyseed

– baby spinach, one bowl

– fresh strawberries, roughly 8 berries (varies based on how much you want)

– red onion, about half an onion finely diced

– ¼ cup pecans for texture 

Instructions

-cut chicken into strips and add to skillet with oil limeade concentrate and pepper 

-cook until fully done and set aside 

-combine sugar, vinegar, onion, mustard seeds, salt, oil, and poppyseed into a bowl

-mix until fully combined 

-assemble salad

🍋 Dessert Options

🩶 Lemonade Popsicles

Ingredients 

-1 fresh lemon 

-½ cup honey 

-2 cups water

-1 cup fresh fruit of your choice 

Instructions 

-blend lemon wedges, honey, and water together until completely smooth 

-strain popsicle mixture into 2 cups measuring cup 

-add fresh fruit to popsicle mold, then pour over popsicle mixture 

🩶 Lemon Crinkle Cookies 

Ingredients 

-¾ cup granulated sugar 

-½ stick of unsalted butter, melted

-1 tsp vanilla extract 

– 2 large eggs

– 2 tbsp lemon juice 

– 2 cups gluten-free flour 

– 1 tsp baking powder 

-¼ tsp salt 

– ½ cup granulated sugar (for rolling) 

– ¾ cup powdered sugar (for rolling)

Instructions
-add sugar and lemon zest to large bowl

-add melted butter and vanilla, whisk until combined 

-add eggs and whisk 

– in a separate bowl, whisk flour, salt, baking powder and add to wet ingredients 

-mix until you get a smooth batter

-chill dough for at least 2 hours 

-preheat oven to 350 degrees 

-line 2 baking sheets with parchment paper 

-shape cookie dough into 1 tbsp portions 

-roll each cookie ball in granulated sugar, then in powdered sugar 

-bake for 8-10 minutes or until cookies have cracks in their sugar
