For today’s blog post we will be sharing a couple of new recipes for you to enjoy. A breakfast classic, a good lunch or dinner, and a staple dessert.
Whether you have been diagnosed with celiac disease, have a gluten sensitivity, or simply want to explore a gluten free lifestyle these recipes are perfect for you.
💜 Breakfast
For our breakfast recipe we’ll be sharing easy gluten-free pancakes.
Ingredients
– 1 cup gluten-free all purpose flour
– 2 tbsp sugar
– 1 tsp baking powder
– 1 cup milk
-1 large egg
– 2 tbsp melted butter or oil
– 1 tsp vanilla extract
Instructions
- Prepare the dry ingredients
In a large mixing bowl, whisk together flour, sugar, baking powder, and salt
- Mix the wet ingredients
Using a separate bowl, beat the egg and add milk, melted butter (or oil), and vanilla extract. Stir well until combined.
- Combine wet and dry ingredients
Pour wet ingredients into the dry ingredients and stir until just combined. Make sure to not over mix. The batter will be slightly lumpy.
- Cook the pancakes
Heat a non-stick pan over medium heat and grease with butter or oil. Pour about ¼ cup of butter on the skillet to cook. Should take about 4 minutes total to cook each side.
- Serve
Stack your pancakes and serve with your favorite toppings like fresh berries, maple syrup, or whipped cream.
💜 Lunch or Dinner
Gluten-Free Chickpea and Spinach Curry Recipe
Ingredients
– 2 tbsp olive oil
– 1 medium onion, finely chopped
– 1 inch piece of fresh ginger, grated
– 1 tsp ground turmeric
– 1 tsp ground cumin
– 1 tsp garam masala
– ½ tsp chilli powder
– 1 can chickpeas, drained and rinsed
– 2 large handfuls of fresh spinach
– 1 can diced tomatoes
– ½ cup coconut milk
– salt and pepper to taste
– fresh cilantro, for garnish
– lime wedges, for serving
Instructions
– In a large pan, heat olive oil over medium heat. Once oil is hot, add the chopped onion and statue for about 3-4 minutes until golden brown.
-Stir in turmeric, cumin, garam masala, and chilli powder. Toast the spices for about 30 seconds and enhance their flavor.
– Pour in chickpeas and stir to coat them in a spice mix. Let them cook for 3-4 minutes to get a little color and blend the flavors together.
– Add diced tomatoes into the pan. Stir everything together and let the mixture simmer for 5-7 minutes, allowing the flavors to mend.
– Slowly stir in spinach in batches. It may seem like a lot but it will wilt and cook down.
– Add in coconut milk and stir to combine. Let the curry simmer for another 5-7 minutes until it is heated through. Season with salt and pepper, to taste.
-Garnish and serve
💜 Tips for Gluten-Free Eating
-Read labels carefully
Gluten is found in many processed foods, so always check the labels for hidden sources of gluten. Look for products specifically labeled “gluten-free” to ensure they meet necessary standards.
-Whole grains
Instead of relying on processed gluten-free flours or mixes, incorporate whole grains. Quinoa, rice, buckwheat, or oats are great options.
-Explore new ingredients
Eating gluten-free opens the door to a variety of new foods and flavors. Experiment with alternative grains like millet or amaranth, and explore gluten-free pasta and bread options made with rice flour, chickpea flour, or almond flour.
-Get creative with snacks
Many gluten-free snacks are available, but you can easily make your own by using naturally gluten-free ingredients such as rice cakes, veggies with dip, or homemade popcorn.

Gluten-Free Lemon Almond Cake
If you’re craving a light and refreshing dessert without chocolate, this recipe is a perfect choice for you! Bursting with fresh citrus flavor and rich texture. It is also easy to make and can be enjoyed by everyone.
Ingredients
– 2 cups almond flour
– ½ cup coconut flour
– 1 tsp baking powder
– ¼ tsp baking soda
– ¼ tsp salt
– 3 large eggs
– ½ cup maples syrup or honey
– ½ cup olive oil or melted coconut oil
– zest of 2 lemons
– ¼ cup fresh lemon juice
– 1 tsp vanilla extract
– powdered sugar, for dusting
Instructions
-Preheat the oven to 350 degrees. Great a round 8-inch pan with olive oil or line with parchment paper
-In a medium-sized bowl, whisk together the eggs until slightly frothy. Add in maple syrup (or honey), olive oil, lemon zest, lemon juice, and vanilla extract. Whisk until everything is fully combined.
-Gradually add dry ingredients to the wet ingredients. Stir until everything is well incorporated and the batter is smooth. Batter will be thicker than traditional cake batter, but still spreadable.
-Pour batter into cake pan and smooth out top with a spatula
-Bake the cake for 30-35 minutes, or until golden brown.
-Cool cake for roughly 10 minutes, then transfer to wire rack to cool completely
-Once cake has cooked you can dust with powdered sugar or drizzle with a lemon glaze on top
Lemon Glaze Recipe
-Mix powdered sugar with a little lemon juice until you get a smooth, pourable consistency.
