For this blog we will be sharing gluten-free recipes for St. Patrick’s Day! Everyone should be able to enjoy quality food regardless of dietary restriction. 🍀 St. Patrick’s Day is just around the corner, and whether you’re Irish or not, it’s a fantastic occasion to embrace the spirit of joy, celebration, and of course, delicious food! If you’re gluten-free, you may be wondering how you can enjoy the traditional dishes for this holiday without the gluten. Have no worries, we’ve got you covered!
💚 Gluten-Free Irish Soda Bread
Irish soda bread is a staple St. Patrick’s Day treat and you don’t have to miss out just because you are eating gluten-free. This version is delicious and perfect for soaking up butter jam, or stew.
Ingredients
– 2 cups gluten-free flour
– 1 tsp baking soda
– ½ tsp salt
– 1 tbsp sugar
– 1 ½ cups buttermilk
– 1 egg
– 1 tbsp melted butter
Directions
- Preheat oven to 375 degrees, line baking sheet with parchment paper
- In a large bowl, combine flour, baking soda, sugar, and salt
- Whisk buttermilk and egg in a separate bowl
- Pour wet ingredients into dry ingredients and mix until a sticky dough forms
- Shape the dough into a round loaf and place onto baking sheet
- Cut an “x” shape on top of the dough with a knife
- Bake for 30-35 minutes or until bread sounds hollow, let cool before slicing
💚 Gluten-Free Shepherd’s Pie
Rich, comforting dish that is perfect for St. Patrick’s Day.
Ingredients
– 1 lb ground lamb or beef
– 1 onion, finely chopped
– 2 carrots, diced
– 2 cloves garlic, minced
– ½ cup frozen peas
– 2 tbsp tomato paste
– 1 cup beef broth
– 1 tbsp Worcestershire sauce ( ensure gluten-free)
– 4 cups mashed potatoes
– salt and pepper, to taste
Directions
- In a large skillet, brown ground beef over medium heat and chop up carrots and onion, then cooked until softened (around 5 minutes)
- Stir in garlic, tomato paste, pea, beef broth, and Worcestershire sauce. Let simmer for 10 minutes, add salt and pepper to taste
- Preheat oven to 375 degrees, transfer meat mixture to a baking dish spreading it evenly
- Spoon mashed potatoes on top, covering meat mixture evenly
- Bake for 20 minutes, until the top is golden and slightly crisp. Let cool slightly before serving
💚 Mint-Chocolate Brownies
Ingredients
For the brownies
– ⅓ cup cornstarch
– ¼ cup cocoa powder
– ½ tsp fine sea salt
– 1 10 oz pack of Andes Baking Chips
– ½ cup semi-sweet chocolate chips
– 6 tbsp unsalted butter (cut into pieces)
– ¾ cup granulated sugar
– 3 large eggs
– 1 tsp vanilla
For the Mint Buttercream
– ½ cup butter softened
– 2 cup powdered sugar
– 1 tsp peppermint extract
– 3-5 drops of green food dye (optional)
– 2 tbsp milk or heavy cream
For the Chocolate Ganache
– 1 cup semi-sweet chocolate chips
– 4 tbsp butter
– ¼ cup heavy cream
Instructions
- Preheat the oven to 350 and line a 9×9 baking dish with parchment paper.
- In a large microwave safe bowl, add Andes baking chips, chocolate chips, and butter. Melt then stir and melt until all the chocolate is melted.
- While chocolate is melting, whisk together cornstarch salt, and cocoa powder into a small bowl and set aside.
- When chocolate is melted, stir in sugar until incorporated. Mix in vanilla, add eggs and stir.
- Stir in dry ingredients and mix until just combined. Transfer batter to baking dish, spread evenly and bake at 350 for 30-35 minutes.
- When brownies have cooled, prepare frosting. Beat butter at medium speed in a bowl, sift in powdered sugar and beat on low speed. Once sugar is incorporated, turn the speed to medium and beat for 3 minutes. Add peppermint, food coloring, milk and beat for an additional minute.
- Spread buttercream in even layers over cooled brownies.
- Prepare chocolate ganache by melting chocolate chips and butter together in the microwave. Stir in heavy cream until combined and pour over buttercream, let sit for 30-60 minutes before cutting up brownies to fully let ganache set up.
💚 Luck of the Irish Shake
Ingredients
– 2 dates, pitted
– 1 cup unsweetened almond milk
– 1 avocado
– 1 cup spinach
– ½ cup ice cubes
– ½ tsp peppermint extract or 1 tbsp fresh mint leaves
Instructions
– Combine all ingredients in a blender and blend until smooth. If you would like to make the shake a thinner consistency, add more ice cubes.
